Fluffy Vegan Pancakes:

Here is my favorite pancake recipe. It makes super fluffy and tasty pancakes, and you can adjust the proportions if you want (this recipe feeds three people with leftovers).

Ingredients:

• Two and a half cups flour
• Six teaspoons baking powder
• One teaspoon salt
• Two cups vegan milk of choice
• Four tablespoons canola oil
• Four tablespoons maple syrup
• Two teaspoons vanilla extract

Mix together the dry ingredients in a medium bowl, then make a well in the center and add in the wet ingredients. Mix it all together, add any other stuff you want to add, such as fruit or chocolate chips, and cook (or not :))however you want!
